  • 1 package Biscoff cookies (about 250g)
  • ½ cup unsalted butter, melted
  • 1 cup apple butter
  • 2 large eggs
  • 1 cup heavy cream
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Begin by preheating your oven to 350°F (175°C).
  2. Make the Crust: In a food processor, crush the Biscoff cookies until they are fine crumbs. Transfer to a mixing bowl and combine with melted butter. Mix until well combined.
  3. Form the Crust: Press the mixture into the bottom and up the sides of a 9-inch pie pan. Make sure it’s evenly packed.
  4. Place the crust in the preheated oven and bake for 10 minutes. Remove and let it cool slightly.
  5. In a large bowl, whisk together the apple butter, eggs, heavy cream, cinnamon, nutmeg, salt, and vanilla extract until smooth.
  6. Pour the apple butter filling into the cooled Biscoff cookie crust, spreading it evenly.
  7. Return the pie to the oven and bake for 35-40 minutes, or until the filling is set and slightly puffed.
  8. Once baked, remove the pie from the oven and let it cool at room temperature for about 30 minutes before slicing.
  9. For a firmer texture, you can refrigerate the pie for an hour before serving.
