- ½ cup unsalted butter, melted
- 1 cup apple butter
- 2 large eggs
- 1 cup heavy cream
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Begin by preheating your oven to 350°F (175°C).
- Make the Crust: In a food processor, crush the Biscoff cookies until they are fine crumbs. Transfer to a mixing bowl and combine with melted butter. Mix until well combined.
- Form the Crust: Press the mixture into the bottom and up the sides of a 9-inch pie pan. Make sure it’s evenly packed.
- Place the crust in the preheated oven and bake for 10 minutes. Remove and let it cool slightly.
- In a large bowl, whisk together the apple butter, eggs, heavy cream, cinnamon, nutmeg, salt, and vanilla extract until smooth.
- Pour the apple butter filling into the cooled Biscoff cookie crust, spreading it evenly.
- Return the pie to the oven and bake for 35-40 minutes, or until the filling is set and slightly puffed.
- Once baked, remove the pie from the oven and let it cool at room temperature for about 30 minutes before slicing.
- For a firmer texture, you can refrigerate the pie for an hour before serving.
