- 1 small onion
- 2 large eggs
- 3 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/3 cup vegetable oil (for frying)
Instructions
- Peel and grate the potatoes and onion using a coarse grater.
- Place the grated mixture in a clean towel or cheesecloth and squeeze out as much liquid as possible.
- Transfer to a mixing bowl and add eggs, flour, salt, and pepper.
- Stir until fully combined and the mixture holds together.
- Heat oil in a skillet over medium-high heat until shimmering.
- Spoon about 1/4 cup of batter into the pan and flatten with the back of a spoon.
- Fry for 3–4 minutes on each side or until golden brown and crispy.
- Transfer pancakes to a paper towel-lined plate to drain excess oil.
- Serve immediately with applesauce or sour cream.
