These Easy No Bake Brownie Bites are rich, fudgy, and coated in silky chocolate, perfect for a quick and delicious treat without turning on the oven.

- 1 cup all-purpose flour (heat treated)
- 1/4 cup Dutch process cocoa powder
- 1/2 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 6 tablespoons unsalted butter
- 1/2 cup granulated sugar
- 3/4 cup light brown sugar
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
- 1/2 cup mini chocolate chips
- 2 cups milk chocolate chips (or semi-sweet or dark)
- 2 teaspoons coconut oil (or shortening)
Instructions
- Heat treat the flour until it reaches a safe temperature of 165°F. Let it cool completely.
- In a medium bowl, stir together the cooled heat-treated flour, cocoa powder, and salt until combined. Set aside.
- Melt the semi-sweet chocolate chips and butter in a microwave-safe bowl in 30-second increments until smooth.
- Beat the melted chocolate-butter mixture with granulated and brown sugars on medium speed for 2 minutes. Add heavy cream and vanilla extract, beating until smooth.
- Add the dry ingredient mixture to the wet ingredients and beat just until combined. Fold in the mini chocolate chips gently.
- Portion out the batter into approximately 35 balls and chill covered in the fridge for 15 minutes.
- Line a large sheet pan with silicone liner or parchment paper. Melt the milk chocolate chips and coconut oil in a microwave-safe bowl.
- Use a fork to dip each brownie bite in melted chocolate and coat fully. Tap off excess chocolate and slide onto the lined sheet pan.
- Let the chocolate-coated truffles set at room temperature until firm. Serve chilled or at room temperature.

- They can be stored for 3-4 days.
