Description

These Easy No Bake Brownie Bites are rich, fudgy, and coated in silky chocolate, perfect for a quick and delicious treat without turning on the oven.


Ingredients

  • 1 cup all-purpose flour (heat treated)
  • 1/4 cup Dutch process cocoa powder
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 6 tablespoons unsalted butter
  • 1/2 cup granulated sugar
  • 3/4 cup light brown sugar
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips
  • 2 cups milk chocolate chips (or semi-sweet or dark)
  • 2 teaspoons coconut oil (or shortening)

Instructions

  1. Heat treat the flour until it reaches a safe temperature of 165°F. Let it cool completely.
  2. In a medium bowl, stir together the cooled heat-treated flour, cocoa powder, and salt until combined. Set aside.
  3. Melt the semi-sweet chocolate chips and butter in a microwave-safe bowl in 30-second increments until smooth.
  4. Beat the melted chocolate-butter mixture with granulated and brown sugars on medium speed for 2 minutes. Add heavy cream and vanilla extract, beating until smooth.
  5. Add the dry ingredient mixture to the wet ingredients and beat just until combined. Fold in the mini chocolate chips gently.
  6. Portion out the batter into approximately 35 balls and chill covered in the fridge for 15 minutes.
  7. Line a large sheet pan with silicone liner or parchment paper. Melt the milk chocolate chips and coconut oil in a microwave-safe bowl.
  8. Use a fork to dip each brownie bite in melted chocolate and coat fully. Tap off excess chocolate and slide onto the lined sheet pan.
  9. Let the chocolate-coated truffles set at room temperature until firm. Serve chilled or at room temperature.
