Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt.
  3. In a separate bowl, beat the eggs, milk, melted butter, and vanilla extract until well combined.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the diced apples.
  5. Spoon the batter onto the prepared baking sheet, forming 8 mounds. Bake for 16-18 minutes, or until golden and set.
