Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt.
- In a separate bowl, beat the eggs, milk, melted butter, and vanilla extract until well combined.
- Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the diced apples.
- Spoon the batter onto the prepared baking sheet, forming 8 mounds. Bake for 16-18 minutes, or until golden and set.
- While the fritters cool slightly, whisk together powdered sugar and milk to make the glaze. Drizzle glaze over warm fritters before serving.
