Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar (or brown sugar for deeper flavor)
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Set your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir the melted butter into the mashed bananas until well incorporated.
  4. Mix in baking soda and a pinch of salt.
  5. Add the sugar (white or brown) to the banana mixture and blend well.
  6. Stir in the beaten egg and vanilla extract until everything is combined.
  7. In another bowl, sift the flour, baking powder, and cinnamon (if using).
  8. Gently fold the dry ingredients into the wet mixture, being careful not to over-mix.
  9. Finally, incorporate the rolled oats until evenly distributed.
  10. Pour the batter into the greased loaf pan and sprinkle extra oats on top if desired.
