- 12 large egg whites
- 1 ½ cups granulated sugar
- 1 cup cake flour
- 1 ½ teaspoons cream of tartar
- ¼ teaspoon salt
- 1 teaspoon strawberry or raspberry extract
- 1 to 2 drops pink gel food coloring
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F. Do not grease the tube pan.
- Sift together cake flour, ¾ cup of the sugar, and salt three times.
- In a large bowl, beat egg whites with cream of tartar until soft peaks form.
- Gradually add the remaining ¾ cup of sugar while beating to stiff peaks.
- Beat in vanilla and strawberry or raspberry extract, then pink food coloring.
- Gently fold in dry mixture in thirds, keeping the batter light and fluffy.
- Spoon batter into the tube pan and smooth the top.
- Bake 35–40 minutes until the top springs back lightly.
- Invert the cake pan to cool upside down completely.
- Once cooled, run a knife around edges to release.
