This Beef Enchilada Casserole combines seasoned ground beef, melted cheese, and zesty sauce in an easy-to-assemble dish.

- 1 lb ground beef
- 1 can enchilada sauce (15 oz)
- 2 cups shredded cheese
- 10 corn tortillas
- 1 onion, chopped
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, brown the ground beef and onion over medium heat.
- Add chili powder, cumin, and salt. Stir to combine.
- Layer 3 tortillas in a baking dish.
- Spread half of the beef mixture over the tortillas.
- Pour half of the enchilada sauce over the beef.
- Add a layer of cheese.
- Repeat the layers with the remaining tortillas, beef, sauce, and cheese.
- Bake for 25-30 minutes until cheese is bubbly.
- Let it cool for a few minutes before serving.

- This casserole is great for leftovers.
