- 2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups mixed berries (fresh or frozen)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
- In a medium bowl, whisk together the rolled oats, flour, baking soda, and salt.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Press half of the oat mixture into the bottom of the prepared baking pan.
- Spread the mixed berries evenly over the oat layer.
- Crumble the remaining oat mixture over the berries.
- Bake for 30-35 minutes, or until golden brown and set.
- Let the berry oat bars cool completely in the pan before cutting into squares.
Notes
- For gluten-free berry oat bars, use a gluten-free flour blend.
- If using frozen berries, do not thaw them before adding to the bars.
- You can substitute other fruits like chopped apples or peaches for the berries.
