Description

Ingredients

  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups mixed berries (fresh or frozen)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
  2. In a medium bowl, whisk together the rolled oats, flour, baking soda, and salt.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Press half of the oat mixture into the bottom of the prepared baking pan.
  7. Spread the mixed berries evenly over the oat layer.
  8. Crumble the remaining oat mixture over the berries.
  9. Bake for 30-35 minutes, or until golden brown and set.
  10. Let the berry oat bars cool completely in the pan before cutting into squares.

Notes

  • For gluten-free berry oat bars, use a gluten-free flour blend.
  • If using frozen berries, do not thaw them before adding to the bars.
  • You can substitute other fruits like chopped apples or peaches for the berries.
