  • 1.5 cups chocolate cookie crumbs
  • 1/4 cup butter, melted
  • 24 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1/2 cup cherry preserves
  • 1/4 cup chopped maraschino cherries
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • 4 oz semi-sweet chocolate, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix chocolate cookie crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat cream cheese and granulated sugar until smooth.
  4. Beat in eggs one at a time, then stir in vanilla extract and sour cream.
  5. Spread half of the cream cheese mixture over the cookie crust.
  6. Spoon half of the cherry preserves and chopped maraschino cherries over the cream cheese layer.
  7. Repeat with the remaining cream cheese mixture, cherry preserves, and cherries.
  8. Bake for 50-60 minutes, or until the center is set.
  9. Let the cheesecake cool in the oven with the door ajar for 1 hour, then cool completely on a wire rack.
  10. Chill in the refrigerator for at least 4 hours or overnight.
  11. For the frosting, whip heavy cream and powdered sugar until stiff peaks form.
  12. Spread frosting over the chilled Black Forest cheesecake. Drizzle with melted semi-sweet chocolate.
