Description

These Blueberry Zucchini Bars are moist, tender, and packed with fresh blueberries and hidden zucchini. They’re an easy and delicious treat perfect for breakfast, snacks, or dessert.

Ingredients

Scale
  • 1 medium zucchini, grated
  • 1 cup fresh blueberries (or frozen)
  • 1 cup all-purpose flour
  • ½ cup rolled oats
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish or line it with parchment paper.
  2. Grate the zucchini. Squeeze out excess moisture if needed.
  3. In a large bowl, combine flour, oats, brown sugar, granulated sugar, baking powder, baking soda, cinnamon, and salt. Mix well.
  4. In another bowl, whisk together melted butter, egg, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Fold in the grated zucchini and blueberries.
  7. Pour the batter into the prepared baking dish and spread evenly.
  8. Bake for 25-30 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  9. Let the bars cool in the pan for 10-15 minutes before removing or cutting.
  10. Dust with powdered sugar before serving, if desired.

Notes

  • Store leftovers in an airtight container at room temperature for up to three days or in the fridge for up to a week.
  • For a marbled look, mash some blueberries and swirl them into the batter.
  • For a sweet finish, drizzle with a simple icing made from powdered sugar and milk.
  • Frozen blueberries can be used; add them while still frozen.
  • If you don’t have rolled oats, you can use quick oats or omit them.
  • To test for doneness, insert a toothpick into the center; it should come out clean or with a few crumbs.
  • The recipe can be doubled for a larger pan, but baking time may increase.
  • These bars are suitable for kids and a great way to include vegetables in their diet.
