Ingredients

  • 3 large carrots, peeled and sliced
  • 1 medium onion, chopped

  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 1/4 cup coconut milk (optional, for creaminess)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for 3-4 minutes until softened.
  2. Add minced garlic, ground cumin, and a pinch of salt. Cook for 1 minute until fragrant.
  3. Add cubed butternut squash and sliced carrots. Stir to combine with the onions and spices.
  4. Pour in the vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until vegetables are tender.
  5. Remove from heat. Use an immersion blender to puree the soup until smooth, or carefully blend in batches in a blender.
