Ingredients

  • 300g pasta of your choice (spaghetti, fettuccine, or penne)
  • 2 large onions, thinly sliced
  • 3 tablespoons olive oil
  • 1 teaspoon sugar
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon red pepper flakes (adjust to preference)
  • 2 tablespoons chilli oil
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional, for serving)

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving about 1 cup of pasta water.
  3. In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add the sliced onions and sprinkle with sugar and a pinch of salt. Cook, stirring occasionally, for about 15-20 minutes, or until the onions are golden brown and caramelized.
  4. Once the onions are caramelized, add black pepper and red pepper flakes to the skillet. Stir well to combine and cook for an additional 2 minutes to enhance the flavors.
  5. Add the cooked pasta to the skillet with the caramelized onions. Toss everything together, adding reserved pasta water gradually until the desired sauce consistency is achieved.
  6. Drizzle the chilli oil over the pasta and toss to coat evenly. Taste and adjust seasoning with extra salt and pepper if needed.
