Description

A delightful and comforting soup that combines the natural sweetness of carrots with the tanginess of tomatoes, creating a smooth, flavorful, and nourishing dish perfect for any occasion.

Ingredients

Scale
  • 4 medium-sized carrots, peeled and chopped
  • 2 cups ripe tomatoes, chopped (or one 14-ounce can of diced tomatoes)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon paprika (optional)
  • ¼ cup heavy cream or coconut milk (for extra creaminess)
  • Fresh basil leaves, for garnish (optional)

Instructions

  1. Heat Olive Oil: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  2. Add Garlic: Stir in the minced garlic and cook for an additional minute, until fragrant.
  3. Combine Carrots and Tomatoes: Add the chopped carrots and tomatoes to the pot. Stir to combine with the onion and garlic mixture.
  4. Pour in Broth: Add the vegetable broth, salt, pepper, and paprika (if using) to the pot. Bring to a boil.
  5. Simmer: Once boiling, reduce the heat to low and let it simmer for 15-20 minutes or until the carrots are tender.
  6. Blend the Soup: Using an immersion blender or a countertop blender, puree the soup until smooth. If using a countertop blender, blend in batches and be cautious of hot liquids.
  7. Add Cream: Return the pureed soup to the pot. Stir in the heavy cream or coconut milk and mix until well incorporated. Adjust seasoning as needed.
  8. Serve Hot: Ladle the soup into bowls and garnish with fresh basil leaves, if desired.

  • Garnish creatively with croutons, cheese, or pesto.
  • For a vegan option, use vegetable broth and coconut milk.
  • The soup can be prepared a day in advance and reheated.
