- 2 cups cooked chicken, shredded or chopped
- 2 cups cooked rice
- 2 cups broccoli florets, lightly steamed
- 1 can (about 10 oz) condensed cream of mushroom soup
- 3/4 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1/2 tsp garlic powder (optional)
- Salt and pepper to taste
- 1/2 cup breadcrumbs or crushed crackers
- 2 tbsp butter, melted
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a large bowl, mix together the cooked chicken, cooked rice, steamed broccoli, condensed soup, sour cream, half of the cheese, milk, garlic powder (if using), salt, and pepper.
- Spoon the mixture into the prepared baking dish and spread evenly.
- Sprinkle the remaining cheese over the top.
- Mix the breadcrumbs or crushed crackers with the melted butter and scatter over the cheese.
- Bake uncovered for 30-35 minutes, or until golden brown and bubbly.
- Let stand for a few minutes before serving.
Notes
- For a slightly drier rice, add an extra splash of milk.
- You can assemble this casserole ahead of time and refrigerate it before baking. Add an additional 10 minutes to the baking time if baking from cold.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheat well in the microwave or oven.
- This casserole can be prepped ahead and frozen. Thaw overnight and reheat.
- For a vegetarian option, omit the chicken and add more vegetables or chickpeas.
- If the casserole is too dry, add a little milk or chicken broth before reheating.
