Description

Chicken Marsala with Mushrooms is a flavorful dish featuring tender chicken breasts and rich mushroom sauce.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 cup sliced mushrooms (cremini or button)
  • 1/2 cup Marsala wine
  • 1/2 cup low-sodium chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with salt, pepper, and garlic powder on both sides.
  2. In a large skillet, heat the olive oil and butter over medium-high heat until melted.
  3. Add the chicken breasts to the skillet. Cook for about 5-7 minutes on each side until golden brown. Remove from the skillet and set aside.
  4. In the same skillet, add sliced mushrooms and cook for about 4-5 minutes until they’ve released their moisture and become tender.
  5. Pour the Marsala wine into the skillet, scraping up any browned bits from the bottom of the pan. Let it simmer for 2-3 minutes.
  6. Stir in the chicken broth and dried oregano. Bring the mixture to a gentle boil.
  7. Return the chicken to the skillet, spooning the sauce over the top. Cover and simmer for about 10-15 minutes until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  8. Remove from heat and sprinkle with chopped fresh parsley before serving.
  9. Plate the chicken and spoon the mushroom sauce over the top.
