Description

Chicken Pot Pie Croquettes are a delicious blend of shredded chicken and vegetables, coated in breadcrumbs and fried to perfection.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 cup cream of chicken soup
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 cups breadcrumbs
  • Vegetable oil, for frying

Instructions

  1. In a mixing bowl, combine the shredded chicken, frozen mixed vegetables, cream of chicken soup, garlic powder, onion powder, thyme, salt, and pepper. Mix well until combined.
  2. Form the chicken mixture into small oval shapes or balls, about 1.5 inches in diameter.
  3. Place the flour in one bowl and the beaten eggs in another bowl. Set the breadcrumbs in a third bowl.
  4. Coat each chicken ball in flour, then dip into the beaten eggs, and finally coat with breadcrumbs. Ensure they are well covered to achieve a crispy texture.
  5. Heat vegetable oil in a deep frying pan over medium heat.
  6. Once hot, carefully place a few croquettes in the oil at a time. Fry until golden brown, about 4-5 minutes per side.
  7. Remove from the oil and place on a paper towel-lined plate to drain any excess oil.
  8. Allow the croquettes to cool slightly before serving. This will enhance their flavor and help them hold their shape better.
