- 2 cups cooked chicken, shredded
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 cup cream of chicken soup
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 1 cup all-purpose flour
- 2 large eggs
- 2 cups breadcrumbs
- Vegetable oil, for frying
Instructions
- In a mixing bowl, combine the shredded chicken, frozen mixed vegetables, cream of chicken soup, garlic powder, onion powder, thyme, salt, and pepper. Mix well until combined.
- Form the chicken mixture into small oval shapes or balls, about 1.5 inches in diameter.
- Place the flour in one bowl and the beaten eggs in another bowl. Set the breadcrumbs in a third bowl.
- Coat each chicken ball in flour, then dip into the beaten eggs, and finally coat with breadcrumbs. Ensure they are well covered to achieve a crispy texture.
- Heat vegetable oil in a deep frying pan over medium heat.
- Once hot, carefully place a few croquettes in the oil at a time. Fry until golden brown, about 4-5 minutes per side.
- Remove from the oil and place on a paper towel-lined plate to drain any excess oil.
- Allow the croquettes to cool slightly before serving. This will enhance their flavor and help them hold their shape better.
