Description

This Chicken Potato Broccoli Casserole is a comforting and delicious one-pan meal. It combines tender chicken, creamy potatoes, and vibrant broccoli in a flavorful bake, perfect for family dinners.


Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 4 cups potatoes, peeled and diced
  • 2 cups broccoli florets
  • 1 cup cheddar cheese, shredded
  • 1 cup cream of chicken soup
  • 1/2 cup milk
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the diced potatoes in boiling salted water for 10-15 minutes until tender. Drain and set aside.
  3. Prepare the chicken by cooking and then shredding or dicing it into bite-sized pieces.
  4. Steam or blanch the broccoli florets for 3-5 minutes. Drain excess moisture.
  5. In a large bowl, combine the cooked chicken, potatoes, steamed broccoli, cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper. Stir until evenly coated.
  6. Grease a 9×13-inch casserole dish with olive oil. Pour the mixture into the dish and spread evenly.
  7. Sprinkle the shredded cheddar cheese over the top.
  8. Optional: Combine breadcrumbs with 1 tablespoon of olive oil and sprinkle over the cheese for crunch.
  9. Bake for 30 minutes, or until the cheese is bubbly and golden brown.
  10. Let the casserole cool for a few minutes before serving.

  • For a gluten-free version, ensure the cream of chicken soup is gluten-free and skip the breadcrumbs or use gluten-free breadcrumbs.
