- 2 cups cooked chicken, shredded or diced
- 4 cups potatoes, peeled and diced
- 2 cups broccoli florets
- 1 cup cheddar cheese, shredded
- 1 cup cream of chicken soup
- 1/2 cup milk
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1/2 cup breadcrumbs (optional for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the diced potatoes in boiling salted water for 10-15 minutes until tender. Drain and set aside.
- Prepare the chicken by cooking and then shredding or dicing it into bite-sized pieces.
- Steam or blanch the broccoli florets for 3-5 minutes. Drain excess moisture.
- In a large bowl, combine the cooked chicken, potatoes, steamed broccoli, cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper. Stir until evenly coated.
- Grease a 9×13-inch casserole dish with olive oil. Pour the mixture into the dish and spread evenly.
- Sprinkle the shredded cheddar cheese over the top.
- Optional: Combine breadcrumbs with 1 tablespoon of olive oil and sprinkle over the cheese for crunch.
- Bake for 30 minutes, or until the cheese is bubbly and golden brown.
- Let the casserole cool for a few minutes before serving.
