Ingredients
Scale
- 2 packs instant ramen noodles (discard the seasoning packets)
- 1 pound boneless, skinless chicken breasts, sliced thin
- 2 tablespoons vegetable oil
- 1 cup snap peas, trimmed
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon sesame oil
- 1 teaspoon chili paste (optional, for heat)
- 2 green onions, sliced (for garnish)
- Sesame seeds (for garnish, optional)
Instructions
- Cook the ramen noodles according to package instructions until just tender. Drain and set aside.
- Slice the chicken breasts thinly and season lightly with salt and pepper.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add the chicken and sauté until cooked through and golden, about 5-7 minutes. Remove chicken from the skillet and set aside.
- In the same skillet, add snap peas, bell pepper, and broccoli. Stir-fry for 3-4 minutes until the vegetables are vibrant and slightly tender.
- Add minced garlic and grated ginger to the vegetables. Stir-fry for an additional 1-2 minutes until fragrant.
- Return the cooked chicken to the skillet. Pour in soy sauce, oyster sauce, sesame oil, and chili paste (if using). Toss everything together to coat.
- Gently fold in the cooked ramen noodles, mixing well to combine with the sauce and ingredients.
- Taste and adjust seasoning as necessary, adding more soy sauce or chili paste if desired.
- Serve hot once everything is well combined and heated through.
Notes
- For best flavor, use fresh vegetables and high-quality chicken.
- Adjust sauce to your taste, adding more soy sauce or oyster sauce for saltiness, or a dash of sugar/honey for sweetness.
- Consider adding fresh herbs like cilantro or basil before serving.
- Do not overcook the vegetables; keep them slightly crunchy for better texture.
- This recipe is great for using up leftover vegetables.
