Description

A delicious and easy low-carb oven dish featuring tender chicken, fresh spinach, and savory mushrooms, topped with melted cheese. Perfect for a healthy weeknight dinner or meal prep.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon paprika
  • ½ teaspoon Italian seasoning
  • ¼ cup heavy cream (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season chicken breasts with salt, pepper, paprika, and Italian seasoning.
  3. Heat olive oil in a large skillet over medium heat. Add garlic and sauté until fragrant. Add mushrooms and cook until softened.
  4. Add spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat.
  5. Place seasoned chicken breasts in a large baking dish. Pour the spinach and mushroom mixture evenly over the chicken.
  6. Drizzle heavy cream over the chicken and vegetables, if using.
  7. Sprinkle shredded cheese generously over the top.
  8. Bake for 30-35 minutes, or until chicken is cooked through and cheese is bubbly and golden.
  9. Let the dish rest for 5 minutes before serving. Garnish with fresh parsley, if desired.

Notes

  • For extra flavor, marinate the chicken in lemon juice, garlic, and herbs before cooking.
  • Frozen spinach can be used; thaw and squeeze out excess moisture.
  • Substitute cream cheese or a Greek yogurt and milk mixture for heavy cream.
  • Ensure chicken reaches an internal temperature of 165°F (75°C).
  • Leftovers can be refrigerated for 3-4 days or frozen for up to 2 months.
