- 1 cup fresh parsley, finely chopped
- 1/2 cup fresh cilantro, finely chopped (optional)
- 4 garlic cloves, minced
- 2 tablespoons red wine vinegar
- 1/2 cup extra virgin olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Finely chop the parsley and cilantro by hand or pulse in a food processor.
- Mince the garlic into very small pieces.
- In a bowl, combine the chopped herbs, garlic, and oregano.
- Add red pepper flakes, salt, and black pepper, and mix well.
- Stir in red wine vinegar.
- Slowly drizzle in olive oil while stirring until fully incorporated.
- Let the chimichurri sit for 10 to 15 minutes to allow the flavors to meld.
- Serve immediately or refrigerate in an airtight container.
