Ingredients
Scale
- 1 package graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 (8 oz) package cream cheese, softened
- 1/2 cup granulated sugar
- 1 cup sour cream
- 2 large eggs
- 1 tablespoon vanilla extract
- 1/4 cup granulated sugar (for cinnamon-sugar mixture)
- 1 tablespoon ground cinnamon
Instructions
- Preheat your oven to 325°F (163°C). Grease an 8×8-inch baking dish.
- In a medium bowl, combine graham cracker crumbs and melted butter. Mix until well combined. Press this mixture firmly into the bottom of the baking dish to create an even crust for your churro cheesecake bars.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add 1/2 cup granulated sugar and continue mixing until fully incorporated.
- Mix in the sour cream until smooth. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Pour the cheesecake filling over the graham cracker crust. Spread evenly for your churro cheesecake bars.
- Bake for 30-35 minutes, or until the cheesecake is set and the center is slightly firm.
- Let the cheesecake bars cool in the dish at room temperature for 10 minutes. Then, refrigerate for at least 2 hours until fully chilled.
- In a small bowl, mix together 1/4 cup granulated sugar and 1 tablespoon ground cinnamon for the churro topping.
- Once the churro cheesecake bars are chilled, sprinkle the cinnamon-sugar mixture evenly over the top.
- Slice into bars and serve chilled.
Notes
- For a cleaner cut, use a sharp knife and wipe it clean between cuts.
- Store leftover churro cheesecake bars in the fridge in an airtight container for up to 5 days.
- For extra cinnamon flavor, add a bit of the cinnamon sugar mixture into the cheesecake batter.
- You can substitute Greek yogurt for sour cream for a lighter option.
- Churro cheesecake bars can be frozen tightly wrapped for up to 3 months. Thaw in the fridge.
- Other crust options include vanilla wafer crumbs or crushed chocolate cookies.
