Description

A refreshing and light cold melon soup blended with fresh basil and mint, perfect for hot summer days. This easy no-cook recipe makes a delightful appetizer or light dessert.


Ingredients

  • 1 medium cantaloupe melon (about 1.2 kg), peeled, seeded, and cubed
  • 1 tablespoon fresh lime juice
  • 1 tablespoon honey
  • 1/4 cup fresh mint leaves, plus extra for garnish
  • 2 tablespoons fresh basil leaves
  • 1/4 cup cold water
  • Pinch of salt
  • Freshly ground black pepper, to taste

Instructions

  1. Place the cubed cantaloupe melon in a blender or food processor.
  2. Add fresh lime juice, honey, mint leaves, basil leaves, cold water, and a pinch of salt.
  3. Blend until completely smooth. Taste and adjust seasoning with black pepper or more honey if desired.
  4. Chill the soup in the refrigerator for at least 1 hour before serving.
  5. Serve cold, garnished with extra mint leaves and a sprinkle of black pepper.

Notes

  • Trust the melon’s sweetness; ripe cantaloupe is usually sweet enough.
  • If fresh herbs are unavailable, the soup can be made without them, though it will be less flavorful.

  • Avoid using lemon juice as a substitute for lime juice; it can be too sharp.
