Description
Classic Coq au Vin is a traditional French dish featuring chicken braised in red wine with mushrooms, bacon, onions, and herbs. This hearty and flavorful recipe is perfect for a comforting dinner.

- 1 whole chicken (about 3.5 lbs), cut into 8 pieces
- 2 cups dry red wine
- 4 oz bacon, diced
- 8 oz cremini mushrooms, sliced
- 12 pearl onions, peeled
- 2 carrots, sliced
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 2 cups chicken broth
- 2 tbsp all-purpose flour
- 2 tbsp olive oil
- 2 sprigs fresh thyme
- 1 bay leaf
- Salt and freshly ground black pepper, to taste
Instructions
- Season the chicken pieces with salt and pepper. In a large Dutch oven, heat olive oil over medium heat. Brown the chicken on all sides, then remove and set aside.
- Add bacon to the pot and cook until crisp. Add pearl onions, carrots, and mushrooms, sautéing until lightly browned. Stir in garlic and tomato paste, cooking for 1 minute.
- Sprinkle flour over the vegetables and stir to coat. Return the chicken to the pot. Pour in red wine and chicken broth, scraping up any browned bits from the bottom.
- Add thyme and bay leaf. Bring to a simmer, cover, and cook on low heat for about 2 hours, or until the chicken is tender and the sauce has thickened.
- Remove the thyme and bay leaf. Adjust seasoning with salt and pepper as needed. Serve hot with crusty bread or potatoes.
Notes
- This dish tastes even better the next day.
- If the sauce is not thick enough, simmer uncovered or whisk in a mixture of butter and flour.
- Chicken thighs and drumsticks are more forgiving than breasts.
- Leftovers can be stored in the fridge for 2-3 days or frozen for about a month.
