Description

Cowboy Butter Chicken Bites are juicy, golden chicken pieces tossed in a rich cowboy butter sauce packed with garlic, lemon, Dijon, and herbs. This skillet recipe is perfect for dinner, party snacks, or meal prep.


Ingredients

  • 1.5 pounds boneless, skinless chicken breasts or thighs
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1 tablespoon Dijon mustard
  • 2 tablespoons lemon juice
  • 2 tablespoons chopped fresh parsley
  • 0.5 teaspoon red pepper flakes

Instructions

  1. Cut chicken into bite-sized pieces and season with salt, pepper, and smoked paprika.
  2. Heat olive oil in a skillet over medium-high heat. Add chicken and sear until golden brown and cooked through. Remove from skillet.
  3. Reduce heat to medium. Add butter to the same skillet and melt.
  4. Stir in minced garlic, Dijon mustard, lemon juice, parsley, and red pepper flakes. Simmer gently for 1 minute.
  5. Return chicken to the skillet and toss to coat in the butter sauce. Cook for another minute to soak in flavor.
  6. Serve hot from the skillet or over rice, pasta, or with crusty bread.
