Description

Creamy Chicken Potato Soup is a comforting and hearty dish, perfect for a chilly day. It combines tender chicken, tender potatoes, and a velvety broth for a satisfying meal.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 medium potatoes, peeled and cubed
  • 1 pound boneless, skinless chicken breasts, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup frozen corn
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic, cooking until the onion is translucent, about 3-5 minutes.
  3. Add the diced chicken to the pot and sauté for about 5 minutes, until browned on all sides.
  4. Stir in the cubed potatoes.
  5. Pour in the chicken broth and bring the mixture to a boil.
  6. Reduce heat to low, cover, and simmer for about 20 minutes, until potatoes are tender.
  7. Stir in the heavy cream and frozen corn.
  8. Add thyme, rosemary, salt, and pepper to taste. Simmer for an additional 5-10 minutes.
  9. Remove from heat and garnish with fresh parsley before serving.

Notes

  • For a lighter version, substitute heavy cream with half-and-half or whole milk.
  • Leftover roasted chicken can be used instead of raw chicken breasts.
  • Add diced jalapeños or red pepper flakes for a spicy kick.
  • Vegetarian option: replace chicken with chickpeas and use vegetable broth.
  • Cheesy option: stir in shredded cheddar or gouda cheese at the end.
  • For a smoky flavor, top with crumbled crispy bacon.
  • Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
  • Freeze cooled soup in a freezer-safe container for up to 3 months.
