- 2 tablespoons butter
- 1 medium onion chopped
- 3 cloves garlic minced
- 1 tablespoon tomato paste
- 1 can (28 ounces) whole tomatoes
- 2 cups chicken or vegetable broth
- 3/4 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh basil optional
Instructions
- In a large pot over medium heat, melt the butter and sauté the chopped onion until soft, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the tomato paste and cook for 2 minutes to deepen the flavor.
- Pour in the canned tomatoes with their juice and the broth. Stir to combine and bring to a simmer.
- Let the soup simmer uncovered for 20 minutes.
- Use an immersion blender to blend the soup until smooth, or carefully transfer to a blender in batches.
- Return the soup to low heat and stir in the heavy cream.
- Season with salt and pepper to taste.
- Stir in basil if using, then serve hot.
