- 1 tablespoon olive oil
- 1 pound Italian sausage, casings removed
- 1 medium onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 (15 ounce) can crushed tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional)
- 1 (19 ounce) package refrigerated cheese tortellini
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add Italian sausage and cook, breaking it up with a spoon, until browned. Remove sausage with a slotted spoon and set aside.
- Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
- Stir in garlic and cook for 1 minute more until fragrant.
- Return sausage to the pot. Add chicken broth, crushed tomatoes, oregano, basil, and red pepper flakes (if using). Bring to a boil, then reduce heat and simmer for 15 minutes to allow flavors to meld.
- Add the refrigerated tortellini to the simmering soup. Cook according to package directions, usually about 8-10 minutes, until tortellini is tender.
- Stir in heavy cream and grated Parmesan cheese. Heat gently until warmed through, but do not boil.
- Season with salt and black pepper to taste.
- Ladle the creamy tortellini soup into bowls and garnish with fresh parsley.
Notes
- For a vegetarian creamy tortellini soup, omit the sausage and add more vegetables like spinach or mushrooms.
- If you prefer a thicker soup, you can add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) in step 6.
