Description

Ingredients

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (15 ounce) can crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 (19 ounce) package refrigerated cheese tortellini
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add Italian sausage and cook, breaking it up with a spoon, until browned. Remove sausage with a slotted spoon and set aside.
  2. Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
  3. Stir in garlic and cook for 1 minute more until fragrant.
  4. Return sausage to the pot. Add chicken broth, crushed tomatoes, oregano, basil, and red pepper flakes (if using). Bring to a boil, then reduce heat and simmer for 15 minutes to allow flavors to meld.
  5. Add the refrigerated tortellini to the simmering soup. Cook according to package directions, usually about 8-10 minutes, until tortellini is tender.
  6. Stir in heavy cream and grated Parmesan cheese. Heat gently until warmed through, but do not boil.
  7. Season with salt and black pepper to taste.
  8. Ladle the creamy tortellini soup into bowls and garnish with fresh parsley.

Notes

  • For a vegetarian creamy tortellini soup, omit the sausage and add more vegetables like spinach or mushrooms.
  • If you prefer a thicker soup, you can add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) in step 6.
