Ingredients

  • 900 g to 1 kg sweet potatoes, scrubbed well, peeled if desired
  • 2 tablespoons neutral oil (avocado or canola)
  • 1 tablespoon cornstarch or arrowroot
  • 1 teaspoon fine sea salt
  • 1 teaspoon smoked paprika or regular paprika
  • 1/2 teaspoon garlic powder
  • Freshly ground black pepper, to taste
  • Optional: pinch of chili flakes, drizzle of maple syrup, chopped fresh herbs

Instructions

  1. Preheat oven to 230 C (450 F). Place a rimmed baking sheet in the oven to preheat for at least 10 minutes.
  2. Cut sweet potatoes into 2 cm (1 inch) chunks or wedges. Rinse and pat them very dry.
  3. In a large bowl, toss the sweet potato pieces with cornstarch until lightly coated.
  4. Add the oil, salt, paprika, garlic powder, and black pepper. Mix until well seasoned.
  5. Carefully remove the hot baking sheet from the oven. Spread the sweet potatoes in a single layer, ensuring they have space.
  6. Roast for 15 minutes without disturbing them.
  7. Flip the sweet potatoes with a spatula.
  8. Roast for another 10 to 15 minutes, until the edges are deeply golden and the centers are tender. For extra crispy results, you can broil for 1-2 minutes at the end, watching carefully.
  9. Taste and adjust salt if needed. Add optional maple syrup or herbs if desired.
