- 900 g to 1 kg sweet potatoes, scrubbed well, peeled if desired
- 2 tablespoons neutral oil (avocado or canola)
- 1 tablespoon cornstarch or arrowroot
- 1 teaspoon fine sea salt
- 1 teaspoon smoked paprika or regular paprika
- 1/2 teaspoon garlic powder
- Freshly ground black pepper, to taste
- Optional: pinch of chili flakes, drizzle of maple syrup, chopped fresh herbs
Instructions
- Preheat oven to 230 C (450 F). Place a rimmed baking sheet in the oven to preheat for at least 10 minutes.
- Cut sweet potatoes into 2 cm (1 inch) chunks or wedges. Rinse and pat them very dry.
- In a large bowl, toss the sweet potato pieces with cornstarch until lightly coated.
- Add the oil, salt, paprika, garlic powder, and black pepper. Mix until well seasoned.
- Carefully remove the hot baking sheet from the oven. Spread the sweet potatoes in a single layer, ensuring they have space.
- Roast for 15 minutes without disturbing them.
- Flip the sweet potatoes with a spatula.
- Roast for another 10 to 15 minutes, until the edges are deeply golden and the centers are tender. For extra crispy results, you can broil for 1-2 minutes at the end, watching carefully.
- Taste and adjust salt if needed. Add optional maple syrup or herbs if desired.
