Description
This recipe creates a delightful crispy zucchini grilled cheese sandwich, combining crunchy zucchini with gooey melted cheese. Enhanced with aromatic garlic butter, it’s a comforting yet healthy twist on a classic. It’s a simple, quick, and versatile dish perfect for any meal.
Ingredients
Scale
- 2 medium zucchinis, thinly sliced
- 4 slices of your favorite bread (sourdough or whole grain recommended)
- 1 cup shredded cheese (cheddar, mozzarella, or a blend)
- 3 tablespoons unsalted butter
- 2 cloves garlic, minced
- Salt, to taste
- Pepper, to taste
- Fresh herbs (optional, such as basil or parsley for garnish)
Instructions
- Thinly slice the zucchinis. Sprinkle a little salt on them and let them sit for 5 minutes to draw out moisture.
- In a large skillet, heat 1 tablespoon of butter over medium heat.
- Add the zucchini to the pan and cook until lightly browned and tender, about 3-4 minutes. Remove from the skillet and set aside.
- In the same skillet, add the remaining butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant.
- Spread garlic butter on one side of each bread slice. On the unbuttered side, layer the sautéed zucchini and shredded cheese.
- Place the sandwich in the skillet, butter side down. Grill until the bread is golden brown and crispy, about 3-4 minutes.
- Flip carefully and cook until the other side is similarly browned and the cheese has melted.
- Once cooked, remove the sandwich from the skillet. Optionally, garnish with fresh herbs before slicing and serving your crispy zucchini grilled cheese.
Notes
- Experiment with different cheese types like gouda, pepper jack, or havarti for varied flavors in your zucchini grilled cheese sandwich.
- Add spices like red pepper flakes or paprika for an extra kick to your crispy zucchini grilled cheese.
- Use freshly minced garlic for a more robust flavor.
- Watch the heat to prevent burning the bread before the cheese melts, ensuring a perfectly crispy zucchini grilled cheese.
- For a nutrient boost, mix in some fresh spinach with the zucchini when sautéing.
- Store leftover crispy zucchini grilled cheese sandwiches wrapped in foil or an airtight container in the fridge for up to 3 days.
- You can freeze uncooked assembled crispy zucchini grilled cheese sandwiches for up to 1 month. Wrap them tightly in plastic wrap and cook from frozen, adding a few extra minutes to the cooking time.
