  • 4 medium-sized russet potatoes, diced
  • 1 cup chopped carrots

  • 1 small onion, diced

  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 cup heavy cream
  • 1 tablespoon cornstarch (optional)
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Dice potatoes, carrots, celery, and onion into uniform pieces.
  2. Place diced vegetables in the bottom of the slow cooker.
  3. Layer chicken breasts on top of the vegetables.
  4. In a separate bowl, combine chicken broth, garlic powder, onion powder, salt, pepper, thyme, and rosemary.
  5. Pour the broth mixture over the chicken and vegetables in the slow cooker.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is tender.
  7. Remove chicken, shred it with two forks, and return it to the soup.
  8. Stir in heavy cream. If desired, mix cornstarch with water and add for thickening.
  9. Allow the soup to warm through for 10-15 minutes after adding cream, stirring occasionally.
  10. Ladle into bowls and garnish with fresh parsley, if desired.
