Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 packet (1 oz) taco seasoning or 2 tablespoons homemade taco seasoning
  • 1 can (14.5 oz) diced tomatoes with green chilies, undrained
  • 1/2 cup chicken broth
  • Juice of 1 lime
  • 12 small taco-sized tortillas (corn or flour)
  • Optional toppings: shredded lettuce, diced tomatoes, shredded cheese, avocado slices, sour cream, salsa, cilantro

Instructions

  1. Place chicken breasts or thighs into your slow cooker.
  2. Generously sprinkle taco seasoning all over the chicken.
  3. Pour in the undrained diced tomatoes with green chilies and the chicken broth.
  4. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until chicken is tender.
  5. Remove chicken from the slow cooker and shred using two forks.
  6. Return shredded chicken to the slow cooker and stir with the sauce.
  7. Stir in the fresh lime juice.
  8. Warm tortillas according to package directions.
