- 2.5 pounds boneless, skinless chicken breasts
- 2 teaspoons dried oregano
- 1.5 teaspoons garlic powder
- 1.5 teaspoons salt
- 1 teaspoon cracked black pepper
- 0.5 teaspoon smoked paprika
- 1 large yellow onion, diced
- 3 cups frozen mixed vegetables
- 1 can (10.5 ounce) condensed cream of chicken soup
- 1 can (10.5 ounce) condensed cream of celery soup
- 0.5 cup chicken broth
- 0.5 cup heavy cream
- 1 can (16.3 ounce) jumbo biscuits, 8-count
Instructions
- Place chicken breasts in the bottom of your slow cooker.
- Sprinkle chicken evenly with dried oregano, garlic powder, salt, cracked black pepper, and smoked paprika.
- Add diced yellow onion and frozen mixed vegetables on top of the chicken.
- In a separate medium bowl, whisk together condensed cream of chicken soup, condensed cream of celery soup, chicken broth, and heavy cream until smooth.
- Pour the soup mixture over the ingredients in the slow cooker.
- Cover and cook on low for 4-6 hours or on high for 2-3 hours, until chicken is cooked through and vegetables are tender.
- Carefully remove chicken breasts from the slow cooker.
- Shred chicken using two forks on a cutting board.
- Return shredded chicken to the slow cooker and stir to combine.
- Prepare biscuits according to package directions.
- Ladle chicken pot pie mixture into bowls and serve with prepared biscuits.
Notes
- For a thicker filling, mix 1-2 tablespoons of cornstarch with a little cold water to create a slurry. Stir into the slow cooker during the last 30 minutes of cooking.
- You can substitute chicken thighs for breasts.
- Fresh vegetables can be used instead of frozen; dice them uniformly and consider sautéing the onion first.
