Description

Ingredients

  • 2.5 pounds boneless, skinless chicken breasts
  • 2 teaspoons dried oregano
  • 1.5 teaspoons garlic powder
  • 1.5 teaspoons salt
  • 1 teaspoon cracked black pepper
  • 0.5 teaspoon smoked paprika
  • 1 large yellow onion, diced
  • 3 cups frozen mixed vegetables
  • 1 can (10.5 ounce) condensed cream of chicken soup
  • 1 can (10.5 ounce) condensed cream of celery soup
  • 0.5 cup chicken broth
  • 0.5 cup heavy cream
  • 1 can (16.3 ounce) jumbo biscuits, 8-count

Instructions

  1. Place chicken breasts in the bottom of your slow cooker.
  2. Sprinkle chicken evenly with dried oregano, garlic powder, salt, cracked black pepper, and smoked paprika.
  3. Add diced yellow onion and frozen mixed vegetables on top of the chicken.
  4. In a separate medium bowl, whisk together condensed cream of chicken soup, condensed cream of celery soup, chicken broth, and heavy cream until smooth.
  5. Pour the soup mixture over the ingredients in the slow cooker.
  6. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until chicken is cooked through and vegetables are tender.
  7. Carefully remove chicken breasts from the slow cooker.
  8. Shred chicken using two forks on a cutting board.
  9. Return shredded chicken to the slow cooker and stir to combine.
  10. Prepare biscuits according to package directions.
  11. Ladle chicken pot pie mixture into bowls and serve with prepared biscuits.

Notes

  • For a thicker filling, mix 1-2 tablespoons of cornstarch with a little cold water to create a slurry. Stir into the slow cooker during the last 30 minutes of cooking.
  • You can substitute chicken thighs for breasts.
  • Fresh vegetables can be used instead of frozen; dice them uniformly and consider sautéing the onion first.
