- 1 cup cornmeal
- ½ cup gluten-free all-purpose flour
- 1½ teaspoons baking powder
- ½ teaspoon salt
- 1 tablespoon sugar
- 1 large egg
- ½ cup milk or buttermilk
- ¼ cup grated onion
- Oil for frying
Instructions
- In a large bowl, whisk together cornmeal, gluten-free flour, baking powder, salt, and sugar.
- Add in the egg, milk or buttermilk, and grated onion. Stir until the batter is thick and evenly combined.
- Heat about 2 inches of oil in a deep skillet to 350°F.
- Use a tablespoon or cookie scoop to drop batter balls into the hot oil. Do not overcrowd.
- Fry 2 to 3 minutes per side or until golden brown.
- Remove with a slotted spoon and drain on paper towels.
- Serve warm with your favorite dipping sauce or side dish.
