Description

Golden Crust Garlic Rosemary Focaccia Muffins are a delightful twist on traditional focaccia, offering a soft, flavorful, and perfectly golden muffin infused with garlic and aromatic rosemary. These easy-to-make muffins are perfect for any occasion, from breakfast to a savory side dish.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon granulated sugar
  • ¼ cup olive oil
  • 1 cup whole milk
  • 2 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried)
  • 1 large egg
  • Optional: Flaky sea salt for topping

Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin pan with paper liners or spray with non-stick cooking spray.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar until evenly combined.
  3. In another bowl, mix the olive oil, milk, minced garlic, chopped rosemary, and egg until well blended.
  4. Gradually add the wet ingredients to the dry ingredients. Stir gently until just combined. Do not overmix.
  5. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  6. If desired, sprinkle a pinch of flaky sea salt on top of each muffin.
  7. Place the muffin pan in the preheated oven and bake for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the pan for 5-10 minutes before transferring them to a wire rack to cool completely.

Notes

  • For the best flavor, use fresh garlic and rosemary.
  • Experiment with other herbs like thyme, oregano, or basil.
  • These muffins are best enjoyed warm.
  • Serve with hummus or a flavorful tapenade for a savory snack.
  • Consider making mini muffins for bite-sized treats.
