- 1 bag (30 oz) frozen hash browns, thawed
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 6 large eggs
- 1 cup milk
- 1 pound breakfast sausage or bacon, cooked and crumbled
- 1 small onion, diced
- 1 bell pepper, diced (optional)
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon pepper
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large bowl, combine the thawed hash browns, half of the cheddar cheese, half of the mozzarella cheese, and the cooked sausage or bacon. Mix well.
- Spread the hash brown mixture evenly in the prepared baking dish.
- In another bowl, whisk together the eggs, milk, garlic powder, salt, and pepper until well combined.
- Pour the egg mixture evenly over the hash brown layer in the baking dish.
- Sprinkle the remaining cheddar and mozzarella cheese on top.
- Bake in the preheated oven for 35-40 minutes or until the casserole is set and the cheese is golden brown.
- Remove from the oven and let it cool for about 5-10 minutes before cutting into squares for serving.
- For added flavor, you can garnish with chopped parsley or chives, if desired.
