Ingredients

  • 1 bag (30 oz) frozen hash browns, thawed
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 6 large eggs
  • 1 cup milk
  • 1 pound breakfast sausage or bacon, cooked and crumbled
  • 1 small onion, diced
  • 1 bell pepper, diced (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon pepper

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, combine the thawed hash browns, half of the cheddar cheese, half of the mozzarella cheese, and the cooked sausage or bacon. Mix well.
  3. Spread the hash brown mixture evenly in the prepared baking dish.
  4. In another bowl, whisk together the eggs, milk, garlic powder, salt, and pepper until well combined.
  5. Pour the egg mixture evenly over the hash brown layer in the baking dish.
  6. Sprinkle the remaining cheddar and mozzarella cheese on top.
  7. Bake in the preheated oven for 35-40 minutes or until the casserole is set and the cheese is golden brown.
  8. Remove from the oven and let it cool for about 5-10 minutes before cutting into squares for serving.
  9. For added flavor, you can garnish with chopped parsley or chives, if desired.
