Description

This Healthy Breakfast Apple Crumble is a delicious and nutritious twist on a classic dessert, perfect for a wholesome morning treat.

Ingredients

Scale
  • 6 sweet apples, chopped
  • 1 tbsp cinnamon
  • Pinch of salt
  • 2 tsp coconut oil
  • 2/3 cup oats
  • 2/3 cup pecans
  • 1 tbsp coconut oil
  • 2 tsp honey
  • About 1 tbsp water (for processing)

Instructions

  1. Chop the sweet apples into bite-sized pieces. Heat 2 teaspoons of coconut oil in a pan over medium-high heat. Add the chopped apples along with 1 tablespoon of cinnamon and a pinch of salt. Cover the pan and sauté the mixture for 2-3 minutes until the apples begin to soften and the spices are fragrant.
  2. While the apples are cooking, preheat your oven to 180°C (350°F) to prepare for baking the crumble.
  3. In a food processor, combine 2/3 cup oats, 2/3 cup pecans, 1 tablespoon coconut oil, and 2 teaspoons honey. Add about 1 tablespoon of water to help bind the mixture. Process until you get a crumbly texture that holds together when pressed.
  4. Prepare a small baking pan by oiling the surface or lining it with parchment paper. Spread the sautéed apples evenly on the bottom. Then, squeeze and crumble the processed oat mixture into larger pieces and spread them over the apples to form a thick, rustic topping.
  5. Place the baking pan in the preheated oven and bake for 15-20 minutes or until the crumble topping turns golden brown and crispy.
  6. Allow the apple crumble to cool slightly. Serve warm with milk or yogurt for a healthy breakfast, or enjoy it as a dessert with a scoop of ice cream for extra indulgence.
