  • 2 avocados (peeled, pit removed)
  • 1/4 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup coconut sugar
  • 2 eggs
  • 1/2 teaspoon baking soda
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the avocados, almond flour, cocoa powder, coconut sugar, eggs, and baking soda in a food processor and blend until smooth.
  3. Fold in the chocolate chips gently by hand.
  4. Line a baking pan with a lightly greased sheet of foil or a non-stick silicone baking mat.
  5. Spoon about a tablespoon of batter for each cookie onto the prepared baking pan, spaced evenly apart.
  6. Bake the cookies for 10 minutes, or until set and slightly firm to the touch.
