- 1.5 pounds Cod fillets
- 1/4 cup Honey
- 1/4 cup Soy sauce
- 2 tablespoons Olive oil
- 2 cloves Fresh garlic, minced
- 1 tablespoon Fresh ginger, grated
- 2 tablespoons Lemon juice
- Salt to taste
- Black pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, whisk together honey, soy sauce, olive oil, minced garlic, grated ginger, lemon juice, salt, and pepper to create the marinade.
- Place the cod fillets in a shallow dish or resealable bag. Pour the marinade over the fish, ensuring each fillet is well-coated. Let it marinate for at least 10 minutes.
- Line a baking dish with parchment paper or lightly grease it.
- Arrange the marinated cod fillets in the prepared baking dish, reserving some of the marinade for basting.
- Bake for 15-20 minutes, or until the cod is opaque and flakes easily with a fork. Baste the fish with the reserved marinade halfway through cooking.
- Remove the cod from the oven and let it rest for a couple of minutes.
- Garnish with fresh cilantro before serving.
- Serve hot with your favorite sides.

- For a gluten-free option, substitute soy sauce with tamari or coconut aminos.
- If you don’t like cilantro, fresh parsley or green onions are good alternatives for garnish.
