Description

A quick and flavorful 30-minute recipe for honey marinated baked cod. This dish features tender cod fillets coated in a sweet and savory marinade, baked to perfection.

Ingredients

Scale
  • 1.5 pounds Cod fillets
  • 1/4 cup Honey
  • 1/4 cup Soy sauce
  • 2 tablespoons Olive oil
  • 2 cloves Fresh garlic, minced
  • 1 tablespoon Fresh ginger, grated
  • 2 tablespoons Lemon juice
  • Salt to taste
  • Black pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, whisk together honey, soy sauce, olive oil, minced garlic, grated ginger, lemon juice, salt, and pepper to create the marinade.
  3. Place the cod fillets in a shallow dish or resealable bag. Pour the marinade over the fish, ensuring each fillet is well-coated. Let it marinate for at least 10 minutes.
  4. Line a baking dish with parchment paper or lightly grease it.
  5. Arrange the marinated cod fillets in the prepared baking dish, reserving some of the marinade for basting.
  6. Bake for 15-20 minutes, or until the cod is opaque and flakes easily with a fork. Baste the fish with the reserved marinade halfway through cooking.
  7. Remove the cod from the oven and let it rest for a couple of minutes.
  8. Garnish with fresh cilantro before serving.
  9. Serve hot with your favorite sides.

Notes

  • For a gluten-free option, substitute soy sauce with tamari or coconut aminos.
  • If you don’t like cilantro, fresh parsley or green onions are good alternatives for garnish.
  • Marinate the cod for longer, up to 30 minutes, to intensify the flavors.
  • Add red pepper flakes to the marinade for a spicy kick.
  • Leftover cod can be used in salads, tacos, or pasta dishes.
