Ingredients

  • 1 lb mixed seafood (shrimp, scallops, and white fish)
  • 4 slices of bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium potatoes, peeled and diced
  • 1 cup corn (fresh or frozen)
  • 4 cups clam juice or seafood stock
  • 2 cups heavy cream
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the bacon in a large pot over medium heat until crispy. Remove bacon, leaving drippings.
  2. Sauté diced onions in bacon drippings until translucent, about 5 minutes. Add minced garlic and cook for 1 minute more.
