  • 1/2 cup unsalted butter, melted

  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Set your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal later.
  2. In a large bowl, combine the melted butter and mashed bananas. Stir until well mixed.
  3. Mix in the granulated sugar, eggs, and vanilla extract until thoroughly combined.
  4. In a separate bowl, whisk together the baking soda, salt, flour, and cinnamon (if using).
  5. Gradually add the dry ingredients to the banana mixture, stirring gently until just combined. Do not overmix.
  6. Transfer the batter into the prepared loaf pan, smoothing the top with a spatula.
  7. Place in the preheated oven and bake for approximately 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Once baked, remove the banana bread from the oven and let it cool in the pan for about 10-15 minutes. Then, transfer it to a wire rack to cool completely.
  9. In a medium bowl, whisk together the mascarpone cheese, powdered sugar, espresso powder, and vanilla extract until smooth and creamy.
  10. Once the banana bread has cooled, slice it and generously spread the espresso mascarpone topping over each piece. Optionally, dust with cocoa powder for added flair!
