- 2 cups chocolate cookie crumbs
- 5 tablespoons melted butter
- 24 ounces cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1/2 cup Kahlua coffee liqueur
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 325°F. Combine chocolate cookie crumbs with melted butter. Press into a springform pan and bake for 10 minutes. Let cool.
- Beat cream cheese in a large bowl until smooth. Add sugar gradually, beating until creamy.
- Add eggs one at a time, mixing well after each.
- Mix in Kahlua, heavy cream, and vanilla until the batter is smooth.
- Pour batter into cooled crust. Bake in a water bath for 55–65 minutes until edges are set and center is slightly jiggly.
- Turn off oven, crack the door, and let cheesecake cool inside for 1 hour.
- Refrigerate for at least 4 hours or overnight before serving.
- Garnish with whipped cream, shaved chocolate, or a Kahlua drizzle if desired.
