- 1 pound boneless, skinless chicken breast, diced
- 1/2 cup unsalted roasted peanuts
- 2 tablespoons vegetable oil
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 3 green onions, chopped
- 3–4 dried red chili peppers (adjust to taste)
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon hoisin sauce
- 1 tablespoon cornstarch
- 1/2 cup chicken broth
- Salt and pepper, to taste
Instructions
- In a bowl, combine diced chicken with 1 tablespoon of soy sauce and cornstarch. Let it marinate for about 10 minutes.
- Prepare the Sauce: In a small bowl, mix together the remaining soy sauce, rice vinegar, hoisin sauce, and chicken broth. Set aside.
- Heat the Oil: In a large skillet or wok, heat vegetable oil over medium-high heat.
- Cook the Chicken: Add the marinated chicken to the skillet, cooking until it is browned and cooked through, about 5-7 minutes. Remove the chicken and set aside.
- Stir-Fry the Vegetables: In the same skillet, add the dried chili peppers, garlic, and ginger. Stir-fry for 30 seconds until fragrant.
- Add Peppers and Onions: Add the red and green bell peppers, and half of the green onions. Stir-fry for another 2-3 minutes until the vegetables are tender-crisp.
- Combine Chicken and Sauce: Return the cooked chicken to the skillet and pour the sauce mixture over it. Stir well to combine all ingredients.
- Thicken the Sauce: Cook for an additional 2-3 minutes, allowing the sauce to thicken slightly. If it gets too thick, add a splash of water.
- Add Peanuts: Stir in the roasted peanuts and mix until well combined.
- Serve Hot: Remove the skillet from the heat and garnish with the remaining green onions.
