  • 1 red bell pepper, diced

  • 3 cloves garlic, minced

  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon hoisin sauce
  • 1 tablespoon cornstarch
  • 1/2 cup chicken broth
  • Salt and pepper, to taste

Instructions

  1. In a bowl, combine diced chicken with 1 tablespoon of soy sauce and cornstarch. Let it marinate for about 10 minutes.
  2. Prepare the Sauce: In a small bowl, mix together the remaining soy sauce, rice vinegar, hoisin sauce, and chicken broth. Set aside.
  3. Heat the Oil: In a large skillet or wok, heat vegetable oil over medium-high heat.
  4. Cook the Chicken: Add the marinated chicken to the skillet, cooking until it is browned and cooked through, about 5-7 minutes. Remove the chicken and set aside.
  5. Stir-Fry the Vegetables: In the same skillet, add the dried chili peppers, garlic, and ginger. Stir-fry for 30 seconds until fragrant.
  6. Add Peppers and Onions: Add the red and green bell peppers, and half of the green onions. Stir-fry for another 2-3 minutes until the vegetables are tender-crisp.
  7. Combine Chicken and Sauce: Return the cooked chicken to the skillet and pour the sauce mixture over it. Stir well to combine all ingredients.
  8. Thicken the Sauce: Cook for an additional 2-3 minutes, allowing the sauce to thicken slightly. If it gets too thick, add a splash of water.
  9. Add Peanuts: Stir in the roasted peanuts and mix until well combined.
  10. Serve Hot: Remove the skillet from the heat and garnish with the remaining green onions.
