- 1 lb ground lamb
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1/8 tsp ground cinnamon
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 2 cups cooked rice or quinoa
- 1 cup chopped cucumber
- 1 cup diced tomatoes
- 1/2 cup pickled red onions
- 1/2 cup crumbled feta cheese
- 1 cup Greek yogurt
- 2 tbsp lemon juice
- 1 tbsp chopped fresh dill or mint
Instructions
- In a small bowl, mix Greek yogurt, minced garlic, lemon juice, dill or mint, and a pinch of salt. Chill the sauce while preparing other ingredients.
- Heat olive oil in a skillet over medium heat. Add garlic and cook for 30 seconds until fragrant.
- Add ground lamb, breaking it apart as it cooks. Season with oregano, cumin, cinnamon, salt, and pepper. Cook until browned, about 8 minutes.
- Divide rice or quinoa among four bowls.
- Top each bowl with cooked lamb, cucumber, tomatoes, pickled onions, and feta.
- Drizzle with the prepared creamy sauce. Garnish with extra herbs if desired.
