Description

Enjoy the comforting taste of homemade chocolate chip cookies with these incredibly easy Lazy Chocolate Chip Cookie Bars. This one-bowl, one-pan recipe delivers soft, chewy, and buttery cookie bars packed with chocolate chips, perfect for any occasion.

Ingredients

Scale
  • 225 g unsalted butter, melted and slightly cooled
  • 200 g packed light brown sugar
  • 100 g granulated sugar
  • 2 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 300 g all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 200 g semisweet chocolate chips

Instructions

  1. Preheat your oven to 175°C (350°F). Line a 23 cm by 23 cm (9×9 inch) baking pan with parchment paper, leaving an overhang.
  2. In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth.
  3. Stir in the eggs and vanilla extract until the mixture is glossy and slightly thickened.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gently fold the dry ingredients into the wet ingredients until just combined, being careful not to overmix.
  6. Stir in the chocolate chips until evenly distributed.
  7. Transfer the dough to the prepared baking pan and press it into an even layer.
  8. Bake for 20-25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with moist crumbs.
  9. Let the cookie bars cool completely in the pan on a wire rack.
  10. Once cooled, lift the bars out of the pan using the parchment paper and cut into squares.

Notes

  • For thicker bars, chill the dough for 30 minutes before baking.
  • Swap chocolate chips with nuts or white chocolate for variation.
  • Sprinkle flaky sea salt on top before baking for a sweet and salty contrast.
  • Store in an airtight container at room temperature for up to 3 days.
  • Freeze individually wrapped bars for up to 2 months.
