- 1 cup all-purpose flour
- 1/2 cup granulated sugar (plus extra for dusting)
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 cup granulated sugar (for filling)
- 2 tablespoons all-purpose flour (for filling)
- 1/2 teaspoon baking powder
- 1/2 cup fresh lemon juice (about 2 to 3 lemons)
- Zest of 1 lemon
- Powdered sugar, for dusting
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9 inch square baking dish or line it with parchment paper.
- In a medium bowl, combine melted butter, 1 cup flour, and 1/2 cup sugar. Mix until crumbly, then press into the bottom of the prepared dish. Bake for 15 minutes.
- In a separate bowl, whisk together the eggs, 1 cup sugar, 2 tablespoons flour, baking powder, lemon juice, and lemon zest until well blended.
- Once the crust is slightly golden, remove it from the oven. Pour the lemon filling over the hot crust.
- Return to the oven and bake for 20-25 minutes or until the filling is set and no longer jiggles.
- Remove from the oven and let cool at room temperature before refrigerating for at least 1 hour.
- Once completely cool, dust with powdered sugar. Slice into squares or bars to serve.
