Ingredients

- 2 cups mashed potatoes
- 1 cup cooked bacon, chopped
- 1 cup shredded cheddar cheese
- 3 green onions, sliced
- 1 teaspoon garlic powder
- 0.5 teaspoon salt
- 0.5 teaspoon black pepper
- 1 egg, beaten
- 1 cup breadcrumbs
- Cooking spray or oil for frying
Instructions
- In a large bowl, combine mashed potatoes, bacon, cheese, green onions, garlic powder, salt, pepper, and egg. Mix until well combined.
- Use a spoon or scoop to shape the mixture into small balls and place on a lined tray. Chill for 20 minutes.
- Roll each ball in breadcrumbs to coat.
- Air fry at 400°F for 10-12 minutes, bake at 425°F for 15-18 minutes, or deep fry until golden brown.
- Let cool slightly and serve with sour cream, ranch, or your favorite dip.
