  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda

  • 1 teaspoon cinnamon (optional)
  • 1 1/2 cups all-purpose flour
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the maple syrup, vegetable oil, beaten egg, and vanilla extract until well combined.
  4. In a separate bowl, mix the baking soda, salt, cinnamon, and flour.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined (do not overmix).
  6. If using, fold in the nuts and/or chocolate chips into the batter.
  7. Pour the batter into the prepared loaf pan.
  8. Bake in the preheated oven for 60-65 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the bread to cool in the pan for about 15-20 minutes before transferring it to a wire rack to cool completely.
