- 3 ripe bananas, mashed
- 1/2 cup maple syrup
- 1/4 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon cinnamon (optional)
- 1 1/2 cups all-purpose flour
- 1/2 cup chopped walnuts or pecans (optional)
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, mash the ripe bananas with a fork until smooth.
- Stir in the maple syrup, vegetable oil, beaten egg, and vanilla extract until well combined.
- In a separate bowl, mix the baking soda, salt, cinnamon, and flour.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined (do not overmix).
- If using, fold in the nuts and/or chocolate chips into the batter.
- Pour the batter into the prepared loaf pan.
- Bake in the preheated oven for 60-65 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for about 15-20 minutes before transferring it to a wire rack to cool completely.
