  • 6 pork sausages (or your choice of sausage)
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 carrot, diced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 can (400g) chopped tomatoes
  • 2 tablespoons tomato purée
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup chicken or vegetable stock
  • 1 can (400g) cannellini beans, drained and rinsed
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Heat olive oil in a large ovenproof skillet over medium heat. Add the sausages and cook until browned on all sides. Remove and set aside.
  3. In the same skillet, sauté the chopped onion and garlic for 3-4 minutes until softened.
  4. Stir in the diced carrot, bell pepper, and zucchini. Cook for another 5 minutes.
  5. Pour in the chopped tomatoes, tomato purée, oregano, smoked paprika, salt, and pepper. Stir to combine.
  6. Add the chicken or vegetable stock and rinsed cannellini beans. Mix thoroughly.
  7. Return the browned sausages to the skillet, nestling them into the mixture.
  8. Transfer the skillet to the preheated oven and bake for 40-45 minutes, until the casserole is bubbling and thickened.
  9. Garnish with fresh parsley before serving.

  • For best flavor, use high-quality, flavorful sausages.
  • Adjust spices to your preference, adding chili flakes for heat if desired.
  • Fresh thyme or rosemary can be added during cooking for extra aroma.
