- 6 pork sausages (or your choice of sausage)
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 carrot, diced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 can (400g) chopped tomatoes
- 2 tablespoons tomato purée
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup chicken or vegetable stock
- 1 can (400g) cannellini beans, drained and rinsed
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 180°C (350°F).
- Heat olive oil in a large ovenproof skillet over medium heat. Add the sausages and cook until browned on all sides. Remove and set aside.
- In the same skillet, sauté the chopped onion and garlic for 3-4 minutes until softened.
- Stir in the diced carrot, bell pepper, and zucchini. Cook for another 5 minutes.
- Pour in the chopped tomatoes, tomato purée, oregano, smoked paprika, salt, and pepper. Stir to combine.
- Add the chicken or vegetable stock and rinsed cannellini beans. Mix thoroughly.
- Return the browned sausages to the skillet, nestling them into the mixture.
- Transfer the skillet to the preheated oven and bake for 40-45 minutes, until the casserole is bubbling and thickened.
- Garnish with fresh parsley before serving.
