- 4 cups grated carrots
- 3 tablespoons extra virgin olive oil
- 2 tablespoons fresh lemon juice

- 2 tablespoons chopped fresh parsley

Instructions
- Peel and grate the carrots using a box grater or food processor until you have about 4 cups.
- In a small bowl, whisk together olive oil, lemon juice, garlic, cumin, paprika, and salt.
- Place grated carrots in a large bowl and pour the dressing over them. Toss well to coat.
- Let the salad sit for 10 minutes to absorb flavors.
- Fold in chopped parsley just before serving.
- Top with crumbled feta or toasted nuts if using, and serve chilled or at room temperature.
