A simple and flavorful Mediterranean Chicken Zucchini Bake. This one-pan dish features tender chicken thighs, zucchini, bell peppers, and tomatoes baked with herbs and spices, topped with melted mozzarella cheese.

- 4 boneless, skinless chicken thighs
- 2 medium zucchinis, sliced
- 1 cup cherry tomatoes, halved
- 1 red bell pepper, sliced
- 1 yellow onion, sliced
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the sliced zucchini, cherry tomatoes, red bell pepper, onion, and minced garlic.
- Drizzle with olive oil, season with salt, pepper, oregano, thyme, and paprika. Toss well to coat the vegetables evenly.
- Arrange the seasoned vegetables in a single layer in a large oven-safe skillet or baking dish.
- Pat the chicken thighs dry with paper towels. Season both sides with salt and pepper.
- Place the chicken thighs on top of the vegetables in the skillet.
- Bake in the preheated oven for 25 minutes, or until the chicken is cooked through.
- Remove the skillet from the oven and sprinkle the shredded mozzarella cheese evenly over the chicken and vegetables.
- Return the skillet to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it rest for a few minutes. Garnish with chopped fresh parsley before serving.
