Description

A simple and flavorful Mediterranean Chicken Zucchini Bake. This one-pan dish features tender chicken thighs, zucchini, bell peppers, and tomatoes baked with herbs and spices, topped with melted mozzarella cheese.


Ingredients

  • 4 boneless, skinless chicken thighs
  • 2 medium zucchinis, sliced
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, sliced
  • 1 yellow onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the sliced zucchini, cherry tomatoes, red bell pepper, onion, and minced garlic.
  3. Drizzle with olive oil, season with salt, pepper, oregano, thyme, and paprika. Toss well to coat the vegetables evenly.
  4. Arrange the seasoned vegetables in a single layer in a large oven-safe skillet or baking dish.
  5. Pat the chicken thighs dry with paper towels. Season both sides with salt and pepper.
  6. Place the chicken thighs on top of the vegetables in the skillet.
  7. Bake in the preheated oven for 25 minutes, or until the chicken is cooked through.
  8. Remove the skillet from the oven and sprinkle the shredded mozzarella cheese evenly over the chicken and vegetables.
  9. Return the skillet to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven and let it rest for a few minutes. Garnish with chopped fresh parsley before serving.
